Bibimbap means “mixed rice”. A bowl of rice arrives covered with seasoned vegetables, often some beef, a fried egg and a spoonful of gochujang (red chili paste). You mix it all together before eating. The city of Jeonju, a UNESCO Creative City of Gastronomy since 2012, is the most famous home of bibimbap.
Two styles to try
- Regular bibimbap — served in a bowl (often brass in Jeonju), light and fresh.
- Dolsot bibimbap (돌솥비빔밥) — served sizzling in a hot stone pot. Leave it a minute and the rice at the bottom turns golden and crispy.
For vegetarians
Bibimbap is one of the easiest dishes to make meat-free. Ask for it without meat: 고기 빼 주세요 (go-gi ppae ju-se-yo). Visiting Jeonju Hanok Village? It is the classic lunch — but you can find good versions all over Korea.
